Another breakfast for lunch idea, but your kids won’t be complaining. Try getting a healthy buckwheat pancake mix, throw in some blueberries (rich in antioxidants!) and make miniature pancakes. Send along with a little container of maple syrup or jelly and dip away!
P.S. These are a great make-ahead-of-time meal, too. You can freeze a big batch of these and toss them into their lunchbox. By noon time, they are defrosted and ready to eat!
We do pancakes on Saturday mornings, so just I make a big batch of these then and freeze them for the week!
